
1/2 white onion (I imagine you could use whatever kind you like and less or more depending on how many chunks you like in your soup)
1/4-1/2 tsp oil and or butter
1 tsp minced garlic
1/4 tsp pepper
1/4 tsp flour
1 1/4 C beef broth
1 beef boullion cube
1/2 C water
1 ounce cheese of choice(this is light harvarti in the picture)
3 tbs croutons any flavor
Heat oil and/or butter (I use both) in a small saucepan on med high, add onions and garlic and saute until golden. (about 10 mins). Reduce heat to med add flour and stir for 2 mins. Add broth, boullion cube, water and pepper. Heat to boiling, reduce heat, cover and simmer 15 mins. Pour into broiler safe dish, top with croutons and cheese and broil til bubbly. Enjoy!
