
This recipe is made for 1 serving, but feel free to double or triple depending on how many people you are feeding.
1 c cooked brown rice
2/3 c frozen or fresh veggies (stir fry blend, fiesta blend, its up to you really, sky’s the limit)
1/4 c broth (chicken, beef, or veggie)
1 1/2 tbs stir fry sauce
1/4 tsp soy sauce
1/4 tsp red pepper flakes
2 tbs egg beaters, or an egg white
onion powder, garlic salt, s&p to taste
In skillet on med high, stir fry veggies in broth til crisp tender, about 10 mins. When at desired doneness, reduce heat to med, add rice, sauces, and seasonings. Scoot mixture to side of the pan, add egg beaters and scramble eggs. Mix all together and serve.
