How to select: choose a squash that is uniform in color without palespots or green. It should be heavy for its size.
How to eat: Cut squash in half lengthwise, scoop out seeds, place cut side down on baking sheet, and bake about an hour at 375 degrees F. When it has cooled enough to touch use a fork to scrape out the flesh, comes out stringy like noodles. Mix with butter, S&P, and Parmesan cheese, or make it into spaghetti with some marinara sauce, or add whatever sounds good to you.
Suggestions: My favorate way to eat it is as “spaghetti” with some tomato sauce, parmesan cheese, and seasonings (ital, garlic, s&p, onion). It is also good with butter, and would be delicious with some velveeta and broccoli or with alfredo sauce.
Tate’s take: I really like this veggie. I like even more that it has 0 ww points for a whole cup!! The price is right. It takes a while to cook but is worth it in the end, its so healthy, tasty, inexpensive, and yields a lot of “noodles” to make different recipes with.
